French Onion Chicken Skillet

If you’re someone who can never pass up a rich, velvety bowl of French onion soup on a menu, this one is strictly for you. There is just something unmatched about deep, slow-caramelized onions, a savory broth, and that gorgeous blanket of melted cheese on top. It’s the ultimate comfort food, but let’s be honest...traditional French onion soup usually leaves you needing a nap after all that heavy bread, or it leaves you looking for extra protein an hour later.

That’s exactly why this French Onion Chicken Skillet has become a staple in my dinner rotation. We’re keeping every bit of that restaurant-quality flavor you love, but making it a whole lot smarter for your weeknight routine. By swapping the bread for juicy, well-seasoned chicken breasts (or thighs!), you get a high-protein, low-carb dinner that feels indulgent and cozy without leaving you feeling weighed down. It’s comfort food that actually nourishes you.

The key here is patience with the onions, let them take their time getting sweet, jammy, and golden brown. Trust me, that slow caramelization builds a flavor foundation that makes this dish taste like you spent hours in the kitchen, even though it comes together in just one pan. Pour yourself a glass of wine, let the skillet do its magic, and get ready for a dinner that hits every single spot.

What you'll need:

For the Chicken

  • 4 boneless, skinless chicken breasts (or 6 chicken thighs)

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • 1 tsp kosher salt

  • ½ tsp black pepper

For the French Onion Sauce

  • 2 large sweet onions, thinly sliced

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1 tbsp Worcestershire sauce

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • 1½ cups low-sodium beef broth

  • ½ cup chicken broth

  • 1 tbsp balsamic vinegar

Cheese Topping

  • 4 slices Swiss cheese or Gruyère

  • Optional: ¼ cup shredded mozzarella for extra meltiness

Optional Garnish & Upgrade

  • Fresh parsley or extra thyme

  • 1 fresh lemon (for a bright squeeze right before serving)

What to do:

Step 1: Season the Chicken

Pat the chicken completely dry with paper towels. Season both sides evenly with garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.

Step 2: Sear the Chicken

Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side for breasts (3–4 minutes per side for thighs) until a nice golden crust forms. Note: The chicken does not need to be cooked all the way through yet. Remove the chicken from the pan and set aside on a plate.

Step 3: Caramelize the Onions

Reduce the heat to medium-low. Add the butter and sliced sweet onions to the same skillet. Cook slowly for 20–25 minutes, stirring occasionally, until the onions turn a deep golden brown, soft, and jammy. Don't rush this step—this is where all that rich flavor lives!

Step 4: Build the Sauce

Add the minced garlic, Worcestershire sauce, and thyme to the skillet. Stir and cook for about 1 minute until fragrant. Pour in the beef broth, chicken broth, and balsamic vinegar. Use a wooden spoon to scrape up all those delicious browned bits stuck to the bottom of the pan. Bring to a simmer for 5 minutes.

Step 5: Return Chicken to the Skillet

Nestle the seared chicken back into the bubbly onion mixture and spoon some of those caramelized onions right over top. Cover the skillet and let it simmer for 8–10 minutes, or until the chicken reaches an internal temperature of 165°F.

Step 6: Melt the Cheese & Broil

Top each piece of chicken with a slice of Swiss or Gruyère (and a sprinkle of mozzarella if you like it extra gooey). Place the skillet under the broiler for 2–3 minutes until the cheese is bubbly, melted, and lightly golden.

Tip: Right before serving, give the dish a light squeeze of fresh lemon juice.
