Cajun Shrimp & Cauliflower Grits (A Lighter Twist on a Classic)
If you grew up anywhere near the South, you already know shrimp and grits isn’t just a meal, it’s a whole experience. Traditionally, it started as a simple fisherman’s breakfast along the Carolina coast. Fresh shrimp straight from the water, served over buttery grits. Over time, restaurants started adding cheese, cream sauces, bacon… and before you know it, that humble dish turned into something a little heavier than what our grandmothers probably intended.
Now listen… I love the classic version just as much as the next person. But these days I’ve been finding ways to make some of the meals I grew up eating just a little lighter without losing the flavor. Because let’s be honest .... nobody wants to eat “healthy” if it tastes boring. That’s just not happening over here.
So this version swaps the traditional grits for creamy cauliflower grits. Once you sauté the cauliflower with garlic and mix in a little cheese and creaminess, it gives you that same comforting texture. Then we pile on Cajun-seasoned shrimp cooked with peppers, onions, and garlic so you still get those bold, smoky flavors that make shrimp and grits so good in the first place.
The result is a bowl that still feels like comfort food, but it’s lower in carbs, packed with protein, and lighter than the traditional version. Basically, it’s proof that you don’t have to give up the foods you love, sometimes you just need to tweak them a little.
And trust me… once you spoon those Cajun shrimp over those creamy cauliflower grits, you won’t feel like you’re missing anything.

What you need:
Cauliflower “Grits”
1 bag riced cauliflower
2 tbsp butter or olive oil
2 cloves garlic, minced
¼ cup chicken broth (low sodium)
¼ cup cream cheese or plain Greek yogurt
¼ cup sharp cheddar
2 tbsp parmesan
Seasonings for the grits
½ tsp Tony Chachere's No Salt Seasoning
½ tsp garlic powder
¼ tsp onion powder
¼ tsp smoked paprika
black pepper
These spices give depth so the grits don’t taste flat without salt.
Cajun Shrimp
Ingredients
1 lb large shrimp (peeled & deveined)
1 tbsp olive oil
1 tbsp butter
½ bell pepper diced
¼ onion diced
2 cloves garlic
Cajun seasoning blend
Use:
1 tsp Tony Chachere's No Salt Seasoning
½ tsp smoked paprika
½ tsp garlic powder
¼ tsp onion powder
¼ tsp cayenne (optional heat)
¼ tsp dried thyme
black pepper
That combo recreates the classic Cajun spice profile.
Step 1 – Make the Cauliflower Grits
Heat butter in a skillet.
Add garlic and cook 30 seconds.
Add riced cauliflower and sauté 5–6 minutes.
Pour in chicken broth and cook until tender.
Stir in cream cheese, cheddar, and parmesan.
Mash slightly with a spoon or potato masher for a grit-like texture.
Taste and adjust pepper or paprika.
They should be creamy, cheesy, and rich.
Step 2 – Cook the Cajun Shrimp
Pat shrimp dry.
Toss with olive oil and seasoning blend.
Heat butter in skillet.
Cook onion and bell pepper 3 minutes.
Add garlic.
Add shrimp and cook 2 minutes per side until pink.
Optional Cajun Pan Sauce (HIGHLY recommend)
After shrimp cooks, add to the same pan:
¼ cup low sodium chicken broth
squeeze of lemon
pinch smoked paprika
Let it reduce 1–2 minutes.
This gives you that restaurant shrimp & grits flavor.
Step 3 - Build the Bowl
Spoon cauliflower grits into bowl.
Add Cajun shrimp and peppers.
Drizzle pan sauce over top.

green onions
fresh parsley
extra parmesan
