Beef & Asparagus Skillet with Parmesan Herb Sauce

Ground beef and asparagus might sound like basic weeknight staples, but with the right combination of seasonings and a quick sauce, this skillet turns into something that tastes like it came straight off a steakhouse menu. It’s rich, savory, packed with garlic butter, and coated in a Parmesan herb sauce that feels totally indulgent all made in one single pan in under 30 minutes.


What makes this recipe such a go-to is how light and balanced it is without sacrificing comfort food flavor. Instead of relying on heavy cream or cream cheese to build that rich skillet texture, the sauce comes together with plain Greek yogurt, grated Parmesan, and a splash of broth. It creates a creamy, tangy finish that coats the beef and crisp asparagus perfectly without feeling heavy.


The beauty of this dish is how easily you can customize it with what you have on hand. Ground turkey or lean sirloin work great if you want to switch up the meat, and veggies like green beans or sliced zucchini fit right in if asparagus isn't your thing. What you'll need: (4 servings)

For the Skillet:

 * 1½ lbs lean ground beef

 * 1 lb asparagus, trimmed and cut into 2-inch pieces

 * 1 medium red onion, thinly sliced

 * 5 cloves garlic, minced

 * 2 tbsp olive oil (divided)

 * 1 tbsp butter

 * 1 tsp smoked paprika

 * 1 tsp onion powder

 * 1 tsp garlic powder

 * 1 tsp Italian seasoning

 * ½ tsp black pepper

 * ½ tsp salt (or to taste)

 * ½ tsp crushed red pepper flakes (optional)


For the Parmesan Herb Sauce:

 * ½ cup plain Greek yogurt

 * ¼ cup grated Parmesan cheese

 * 2 tbsp chicken broth

 * 1 tsp Dijon mustard

 * 1 tsp lemon juice

 * 1 tbsp chopped fresh parsley

 * Fresh cracked black pepper


What to do:

  1. Brown the Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and season with smoked paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook for 6 to 8 minutes until browned, breaking it apart as it cooks. Drain any excess grease, move the beef to a plate, and set aside.

  2. Cook the Veggies: In the same skillet, add the remaining olive oil and butter over medium heat. Toss in the sliced red onion and cook for about 4 minutes until soft. Add the asparagus and cook for another 4 to 5 minutes until it's tender-crisp. Stir in the minced garlic during the last minute so it gets fragrant without burning.

  3. Whisk the Sauce: In a small bowl, whisk together the Greek yogurt, Parmesan, chicken broth, Dijon mustard, lemon juice, chopped parsley, and a pinch of black pepper until smooth.

  4. Bring It Together: Turn the heat down to low and return the browned beef to the skillet. Pour in the Parmesan sauce and gently stir everything until coated. Let it warm through for 1 to 2 minutes, keep the heat low so the yogurt sauce stays nice and creamy without bubbling or separating.

  5. Garnish & Serve: Top with extra Parmesan, fresh cracked black pepper, red pepper flakes, and fresh herbs before serving (optional)


    Tip: If preparing this for weekday lunches, slightly undercook the asparagus during Step 2. That way, when you reheat your meal prep container, the asparagus warms through perfectly without getting soft or soggy!
