Creamy Tuscan Salmon with Spinach

If you’re anything like me, you want meals that feel rich, comforting, and satisfying… but still fit into a more balanced way of eating. This Creamy Tuscan Salmon with Spinach is one of my favorite go-to dinners because it gives you that restaurant-style flavor without needing a ton of heavy ingredients or extra sodium.


What makes this dish a little healthier is how we’re building it from the ground up. We’re using salmon as a high-protein base, fresh spinach for nutrients and volume, and keeping the sauce simple but still creamy with garlic, parmesan, and a touch of heavy cream. It’s one of those meals where a little goes a long way in flavor.


For sides, I kept it super flexible. I’m personally serving mine over cauliflower rice (I’m using frozen to keep it easy), but you can absolutely swap in regular white rice, brown rice, or even zucchini noodles if you want something lighter. You can also enjoy it on its own because the sauce and salmon alone are already super filling.


This is a really easy weeknight dinner that comes together quickly but still feels like something special. It’s perfect if you’re trying to cut back on carbs or sodium without feeling like you’re eating “diet food.”






SHOPPING LIST

Protein:

  • 3–4 salmon fillets

Produce:

  • 4–5 cloves garlic

  • 1 bag fresh spinach

  • 1 lemon (optional but recommended)

Dairy:

  • Heavy cream

  • Parmesan cheese

  • Butter (optional but recommended)

Pantry:

  • Sun-dried tomatoes (in oil, drained)

  • Olive oil

  • Low-sodium chicken broth

Spices (low/no sodium friendly):

  • Garlic powder

  • Onion powder

  • Smoked paprika

  • Italian seasoning

  • Black pepper

  • Red pepper flakes (optional)



What to do (3-4 servings):


Season the Salmon

  • Clean & Pat salmon dry

  • Season with garlic powder, onion powder, smoked paprika, Italian seasoning, and black pepper


Sear the Salmon

  • Heat olive oil + butter in a pan over medium-high heat

  • Sear salmon for 4–5 minutes per side until golden and cooked through

  • Remove and set aside


Build the Tuscan Sauce

  • In the same pan, lower heat to medium

  • Add minced garlic and sauté until fragrant

  • Add sun-dried tomatoes

  • Pour in a splash of low-sodium chicken broth to deglaze the pan

  • Add about ¾ cup heavy cream and stir


Add Spinach

  • Add fresh spinach and stir until wilted (2–3 minutes)


Finish the Sauce

  • Stir in parmesan cheese until melted

  • Adjust seasoning with black pepper, garlic powder, or Italian seasoning

  • Optional: add red pepper flakes or a squeeze of lemon for brightness


Bring It All Together

  • Add salmon back into the pan

  • Spoon sauce over the top

  • Let it simmer for 2–3 minutes


SERVE

Serve over cauliflower rice, white rice, brown rice, zucchini noodles, or enjoy as-is.
