What you'll need: (2-3 servings)
1 lb ground chicken
½ red onion, diced
1 bell pepper, diced
2–3 cups coleslaw mix (cabbage + carrots)
Buffalo Sauce (healthier buffalo):
2–3 tbsp buffalo sauce (look for a lower sodium one if you can)
Creamy drizzle (healthy “ranch” vibe):
½ cup plain Greek yogurt
1–2 tbsp water or lemon juice (to thin)
Garlic powder
Black pepper
Optional: tiny bit of dried dill or parsley
What to do:
1. Heat a pan over medium-high.
Add ground chicken.
Break it up and let it get a little browned (don’t rush this part)
Season lightly with garlic powder + black pepper
2. Add your veggies
Toss in red onion + bell pepper
