Shopping List


Ground chicken (1 lb)

Red onion

Bell pepper

Coleslaw mix (cabbage + carrots)

Buffalo sauce (low sodium if possible)

Olive oil or butter

Plain Greek yogurt

Lemon (or apple cider vinegar)

Garlic powder

Smoked paprika

Black pepper

Optional: dried dill or parsley



What you'll need: (2-3 servings)


  • 1 lb ground chicken

  • ½ red onion, diced

  • 1 bell pepper, diced

  • 2–3 cups coleslaw mix (cabbage + carrots)


Buffalo Sauce (healthier buffalo):

  • 2–3 tbsp buffalo sauce (look for a lower sodium one if you can)


Creamy drizzle (healthy “ranch” vibe):

  • ½ cup plain Greek yogurt

  • 1–2 tbsp water or lemon juice (to thin)

  • Garlic powder

  • Black pepper

  • Optional: tiny bit of dried dill or parsley


What to do:


1. Heat a pan over medium-high.

  • Add ground chicken.

  • Break it up and let it get a little browned (don’t rush this part)

  • Season lightly with garlic powder + black pepper

2. Add your veggies

  • Toss in red onion + bell pepper

  • Cook 3–4 minutes until softened

3. Add coleslaw mix

  • Stir and let it cook down for about 3–5 minutes

4. Make it buffalo (but balanced)

  • Lower heat slightly

  • Add buffalo sauce

  • Toss everything together until coated

 

Note: Don’t drown it in buffalo sauce. That’s where sodium and heaviness creep in.

5. Make your drizzle

  • Mix Greek yogurt + lemon juice/water + seasonings

  • Should be smooth and slightly pourable

6. Plate it up. Drizzle the yogurt sauce on top

  1. Enjoy!


 If you want to take it up a notch:

Add a fried or soft egg on top → extra protein + richness

Throw in a little celery if you have it → classic buffalo pairing
