Zucchini Pizza Bites (Low-Carb)

What you'll need (servings 6):


2 large Zucchinis

1 1/2 cups - Mozzarella cheese (grated)

3/4 cup - Marinara sauce

1 tsp - Italian seasoning

1/4 cup - Parmesan cheese

1 cup - Pepperoni (or topping of choice)

1/2 tsp - olive oil


Directions:


  1. Preheat oven to 450 degrees.

  2. Line a baking sheet with foil and drizzle with about 1/2 tsp of olive oil. Set aside.

  3. Slice Zucchini into 1/4 inch slices then arrange them on foil lined baking sheet.

  4. Top Zucchini with sauce, mozzarella cheese, Italian seasoning and pepperoni or your choice of topping.

  5. Bake in oven for about 5 minutes or until cheese is melted. Remove from oven.

  6. Sprinkle parmesan cheese over zucchini slices, return to over for about 2 more minutes.

  7. Enjoy!
