Low-Carb Bayou Bowl

Hi friends! I’m so excited to kick off my brand-new series — 30 Days of Sweater Weather Plates, where I’ll be sharing cozy, 3o different comforting recipes. Think hearty bowls, warm flavors, and plates that just feel like fall, but with a lighter, healthier twist.

For Day 1, I’m starting with one of my new favorites: Low-Carb Bayou Bowl. It’s low-carb, high-protein, and full of that savory-creole flavor that makes you want to curl up under a blanket with a good Netflix movie.


A Little About Me

If you’re new here, welcome! My love for cooking started early. Growing up, I spent a lot of time in the kitchen with my grandmother, aunts and the Food Network. They were always whipping up meals, and I naturally caught the bug. That’s where I discovered how much I loved experimenting with food and learning how different flavors work together.

I’ve always had a curious palate, I’ll try almost anything (as long as it’s not something crazy). Cooking has become my creative outlet, and now it’s something I get to share with all of you.


Why I Love This Recipe

The combo of garlic sausage, cauliflower rice, diced tomatoes, celery, and a kick of Cajun seasoning makes this dish hearty but still light enough to keep you feeling good. Plus, that hint of thyme and optional red pepper flakes really elevate the flavor.

What you''ll need: (Serves 3–4):

  • 2 links Evergood Garlic Sausage, sliced into coins

  • 1 cup celery, diced

  • 1 medium onion, diced

  • 2 cloves garlic, minced (or 1 tsp jarred minced garlic)

  • 1 cup corn kernels (fresh or frozen)

  • 1 (14.5 oz) can diced tomatoes

  • 3 cups frozen cauliflower rice

  • 1 tsp Tony Chachere’s No Salt Creole Seasoning or Cajun Seasoning

  • 1 tsp paprika

  • ½ tsp black pepper

  • ½ tsp dried thyme

  • ¼–½ tsp crushed red pepper flakes (optional, for heat)

  • 1 tbsp olive oil (or avocado oil)

Optional toppings: fresh parsley, green onions, or a sprinkle of parmesan


What to do:

  1. Heat olive oil in a large skillet over medium heat.

  2. Add sliced sausage and cook until edges brown (4–5 minutes). Remove and set aside.

  3. In the same skillet, add onions, celery, and garlic. Sauté until softened and fragrant, about 3 minutes.

  4. Stir in corn and canned tomatoes (with juice). Season with Tony’s, paprika, thyme, black pepper, and crushed red pepper (if using). Let simmer for 5 minutes.

  5. Add cauliflower rice and cook until heated through, about 6–7 minutes.

  6. Return sausage to the skillet, stir everything together, and taste to adjust seasoning.

  7. Serve hot, topped with parsley or green onions.


Serving suggestion: Grab a bowl, curl up under your blanket, and pair it with a Netflix movie — instant cozy vibes.
