This creamy beef taco soup is loaded with ground beef, peppers, onions, flavorful taco spices and you can dress it up with all your favorite toppings! It's quick and simple to make.
What you'll need (serves 4-6):
1 1/2 to 2 lbs - Ground Beef
1 medium onion (diced)
1 Bell Pepper (diced)
1 Jalapeno (minced) optional
1 tbsp - Minced Garlic
20 oz - Canned diced tomatoes
32 oz - Beef broth
1/2 cup - Salsa
2 - Taco Seasoning Packages
8 oz - Cream Cheese (softened)
1/2 cup - Heavy Cream
2 cups - Colby Jack Cheese (or your favorite cheese)
Salt & Pepper (to taste)
Cilantro, Cheese, Avocado, Tortilla Strips or whatever garnishing you'd like
Directions:
Saute' ground beef, bell pepper, jalapeno & onion in a skillet over medium heat until done. Drain excess oil and season meat with salt & pepper.
Transfer meat & veggie mixture to instant pot. Add Garlic, tomatoes , broth, taco seasoning and salsa and mix to combine
Seal and set pressure cooker to High Pressure for 3 minutes. When cycle is complete, allow pressure to release manually.
Open instant pot and add cream cheese, heavy cream and cheddar cheese. Mix until soup is well blended.
Serve and garnish with your favorite toppings.
