Creamy Garlic Tuscan Chicken Tenders

When the weather cools down, I crave dinners that feel like a warm hug.....creamy, comforting, and filling without being over the top. This Tuscan Chicken is exactly that. Tender chicken breast tenders simmered in a garlicky, parm cheesy coconut cream sauce with sun-dried tomatoes and spinach… it’s giving all the cozy vibes. 🍂

 

I love using sun-dried tomatoes in this dish because they add that rich, slightly tangy flavor that makes the sauce stand out. And instead of serving this over pasta, I went with creamy cauliflower mash — and let me just say, it’s a game changer. You still get that hearty, comfort-food feel without it being too heavy.

 

The best part?

This dish is quick enough for a weeknight but special enough for a cozy weekend dinner.

What you'll need:

 

1 lb chicken breast tenders

1 tbsp olive oil (or avocado oil)

2 cloves garlic, minced

½ small onion, finely diced

2 tbsp sun-dried tomatoes in oil (from a jar)

1 cup baby spinach

½ cup unsweetened coconut cream (swap for light cream or half-and-half if you prefer)

¼ cup grated Parmesan cheese (or mix Parmesan + a little mozzarella)

½ tsp Italian seasoning

¼ tsp paprika

Salt & black pepper, to taste

Optional: fresh basil or parsley, for garnish


What to do:


  1. After cleaning chicken, pat chicken breast tenders dry. Season both sides with salt, pepper, paprika, and half of the Italian seasoning. Heat olive oil in a skillet over medium-high heat. Sear chicken tenders for 3–4 minutes per side until golden brown and cooked through. Remove and set aside.

  2. In the same skillet, add onion and garlic. Sauté 1–2 minutes. Stir in sun-dried tomatoes and cook until fragrant. Lower heat, add coconut cream, Parmesan, and remaining Italian seasoning. Stir and simmer 2–3 minutes until sauce thickens slightly.

  3. Stir in spinach until just wilted. Nestle chicken tenders back into the skillet. Spoon sauce over the chicken. Let simmer for 2–3 minutes to bring everything together.

  4. Garnish with fresh basil, parsley or an extra sprinkle of Parmesan. Serve hot over creamy cauliflower mash (my favorite), or try one of the other serving suggestions below. 




    Serving Suggestions

    -Over cauliflower mash (best cozy option).

    -With zucchini noodles for a low-carb vibe.

    -Tossed with pasta if you’re in full comfort-food mode.

    -Alongside roasted broccoli, asparagus, or potatoes for a balanced dinner.
