Cheesy Cabbage Casserole (Low carb)

What you'll need (4-6 servings):


  • 1 pound ground beef or turkey, browned and drained of any excess oil

  • 1 medium onion (diced)

  • 1 medium bell pepper (diced)

  • 1/2 to 1 head of cabbage chopped into medium chunks

  • 1 10 oz can tomatoes with chilies (undrained)

  • 1 tsp - garlic powder

  • 1 tsp - onion powder

  • 1 tsp - Italian seasoning

  • 1 tsp - paprika

  • 1 tsp - chili powder

  • salt and pepper to taste

  • 1 cup shredded cheese (more if you like super cheesy)


Directions:


1. In a medium size skillet brown the ground beef or turkey over medium heat, drain off any excess oil. Season meat with salt & pepper.

2. Add the diced onion and pepper and sauté 3-5 minutes.

3. Add tomatoes with green chilies and spices and stir well. Add cabbage mix and cover pan with lid, allow to cook over medium heat for about 15 minute, stirring occasionally.

4. Remove pan from heat, top with cheese, cover with lid and allow cheese to melt, about 2-3 minutes.

5. Remove lid and serve.
