Chicken Teriyaki Pineapple Bowls

I am a pineapple lover and lately I've been on a serious pineapple kick, I mean like literally just snacking on pineapples everyday. Tonight I made Chicken Teriyaki Pineapple bowls, one of our favorite summer time meals (because I only make them in the summer of course lol) It's a light, delicious, easy and pretty meal, so pretty you don't even want to eat it! And guess what, you don't even need to waste extra dishes because you can eat it straight from your pineapple bowl.

What you will need (serves 4):

2 whole pineapples

1/3 cup soy sauce

2 tsp. minced fresh ginger

3 cloves garlic, minced

4 tbsp. packed brown sugar

2 tbsp. pineapple juice

1 tsp. sesame oil

1 tbsp. vegetable oil

1 1/2 lbs. boneless skinless chicken breast, cut into diced sized pieces

2 tsp. water

2 tsp. cornstarch

3 cups cooked rice

Thinly sliced green onions, for garnish (optional)

White Sesame seeds, for garnish (optional)

Directions:

  1. Make pineapple bowls: Cut pineapples in half, leaving the stem intact. Slice the fruit around the perimeters, angling your knife towards the middle, then make a few cuts across. Scoop chunks out with a spoon. You can save the pineapple for garnishing or snacking.

  2. Make sauce: In a bowl, mix together pineapple juice, brown sugar, soy sauce, ginger, garlic, and sesame oil. 

  3. In a large skillet over medium-high heat, heat vegetable oil. Add chicken in an even layer, Season chicken all over and cook until golden, about 3 minutes. Flip and cook until golden on second side until you no longer see pink. Pour sauce over chicken and bring mixture to a simmer. 

  4. Make slurry: Whisk together cornstarch and water, then stir into sauce. Simmer until sauce is thickened, 5 to 6 minutes more. 

  5. Divide rice and chicken between your pineapple bowls and garnish with green onions and sesame seeds.

  6. ENJOY!
